Coffee bean refers to coffee produced from coffee beans that have not been roasted. If ground and brewed, green coffee beans has very little taste, although they are utilized in some forms of traditional Arabic coffee.

Interest in the health effects of green coffee bean extract grew tremendously after research by Dr. Joe Vinson was presented in March 2012. Vinson performed a randomized double-blind placebo-controlled crossover study which found a significant correlation between consumption of green coffee and weight loss. Vinson thinks that the weight loss may be due to chlorogenic acid, which is thought to reduce the absorption of glucose and lower the hyperglycemic peak. The study was small, utilizing only 16 people, and has not yet been replicated, but it drew a large amount of media attention. Green coffee extract is available for purchase from several major providers of nutritional supplements.
